As The Paddock opens for it's 41st year my family and I look forward to the new season with pride and enthusiasm as we introduce our new chef, William Hollinger, who brings to the restaurant a wealth of knowledge and experience as well as a passion for creating fantastic dishes using local ingredients.

Chef William Hollinger
Hailing most recently from Three Mountain Inn in Vermont where he was in large part responsible for its current Four Diamond level, Will also worked as sous chef for Jean-Charles Berruet at The Chanticleer on Nantucket for three years. Hollinger's passion “is all about menu and ingredients”. He further explains how working closely with local commercial fishermen, farmers and purveyors, is always at the forefront of any diverse and exciting menu.
